CHERRY TOMATO BRUNOISE WITH MOTRIL SHRIMP CARPACCIO

Ingredients | Motril shrimp, assorted cherry tomatoes, flour for frying, extra virgin olive oil, lime, Maldon salt and sherry vinegar.
Method | Peel the shrimp. Place three shrimp (just the bodies) between two layers of cling film and flatten them, forming a thin sheet and then freeze it. Dice the tomatoes and dress with the vinegar, olive oil and salt. Arrange the shrimp carpaccio on the plate and season with a few flakes of Maldon salt and lime zest. Add a spoonful of the tomato brunoise and finish it with a fried shrimp head.

FAKE SUSHI WITH MINI-CUCUMBER AND SMOKED SALMON

Ingredients | Snack cucumbers, smoked salmon, cream cheese, white pepper and salt.
Method | Cut the ends off the cucumbers and slice them in half. Remove the skin and set it aside in a moist napkin. Remove the seeds from the cucumbers, cut them into small cubes, season with salt and pepper and add the cheese. Use the skins of the cucumber to form the mixture into rolls, placing a strip of salmon in the centre.

WARM SYMPHONY OF CHERRY TOMATOES AND BURRATA

Ingredients | Burrata, small truffle, assorted cherry tomatoes, extra virgin olive oil, oregano and Maldon salt.
Method | Wash and quarter the cherry tomatoes and sauté them in a hot frying pan with the olive oil, without letting them get too soft. Season with Maldon salt and oregano. Cut the burrata in half and place it on a plate. Grate the truffle on top and add the warm cherry tomatoes.

CUCUMBER TARTAR WITH GREEK YOGHURT AND TROUT ROE

Ingredients | Snack cucumbers, shallot, anchovy fillet, extra virgin olive oil, soy sauce, white pepper, Greek yoghurt and trout roe.
Method | Wash and dice the cucumbers, shallot and anchovy fillet and place them in a bowl. Add the olive oil, soy sauce and pepper, and mix well. Place a spoonful of yoghurt on a plate, add a quenelle of cucumber tartar on top and crown with a teaspoon of roe.

TIMBALE OF AUBERGINE AU GRATIN

Ingredients | Japanese aubergines, assorted cherry tomatoes, mini cheese slices, goat cheese and tomato sauce.
Method | Slice the aubergines at an angle, dredge them with flour and fry. Place a slice of fried aubergine on a plate, followed by a few slices of tomato and half a slice of cheese. Repeat this step to make the timbale. Place in the oven to melt the cheese slightly and serve on a plate on a bed of tomato sauce.

CHERRY TOMATOES STUFFED WITH TAPENADE AND MOZZARELLA

Ingredients | Cherry tomatoes, black olives, capers, anchovy fillet, extra virgin olive oil and mozzarella pearls.
Method | Wash, cut and scoop out the inside of the cherry tomatoes. With a mortar, make a paste with the olives, capers, anchovy and olive oil. Stuff the cherry tomatoes with the tapenade, place half a pearl of mozzarella on top and finish with the upper part of the cherry tomatoes.

OMELETTE WITH SAUTÉED AUBERGINES AND IBERIAN HAM SHAVINGS

Ingredients | Japanese aubergines, eggs, Iberian ham, salt and extra virgin olive oil.
Method | Peel and sauté the aubergines in olive oil until you get a paste, then add the chopped ham. Beat the eggs and add the eggplant paste. In a non-stick frying pan, add the mixture and shape it into a roll. To serve, cut the omelette into portions and garnish with a slice of cherry tomato.

AUBERGINE AND PEPPER PARCELS

Ingredients | Japanese aubergines, sweet mini-peppers, shallot, béchamel sauce, pumpkin purée, extra virgin olive oil and salt.
Method | Peel and sauté the aubergines in olive oil until you get a paste, then add the chopped ham. Beat the eggs and add the eggplant paste. In a non-stick frying pan, add the mixture and shape it into a roll. To serve, cut the omelette into portions and garnish with a slice of cherry tomato.

BAKED MINI-PEPPERS STUFFED WITH SEAFOOD

Ingredients | Monkfish, prawns, mussel meat, shallot, extra virgin olive oil, flour, seafood stock, sweet mini-peppers and cherry tomato sauce.
Method | Chop the shallot and sauté in olive oil. Add the fish and seafood. When cooked, add the flour and stock. Let it simmer until the filling thickens. Cut the tops off the mini-peppers and scoop out the seeds. Stuff them with the filling and bake in the oven at 180° for 5 minutes. Serve on a bed of the cherry tomato sauce.
